A French cookbook in 1653 had a ‘Tourte of Pumpkin’ recipe that included boiled pumpkin in milk, sugar, butter, and then baked in a pastry shell. A 1670 recipe by an American woman included pumpkin and apples baked in a pie with rosemary, jam, and thyme.
Current day traditional Pumpkin Pie recipe ingredients include a pastry pie crust, sugar, salt, cinnamon, cloves, ginger, eggs, pureed pumpkin, evaporated milk. And of course the optional whipped cream topping.
